  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  4. Gently fold in the chopped cranberries, pistachios, and orange zest (if using) until evenly distributed.
  5. Divide the dough into two equal portions. Roll each portion into a log about 2 inches in diameter. Wrap each log tightly in plastic wrap or parchment paper.
  6. Place the wrapped dough logs in the refrigerator for at least 2 hours or overnight.
  7. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
