2 medium-sized zucchini (about 1 pound)
1 cup breadcrumbs (use gluten-free if needed)
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Your choice of dipping sauces (e.g., marinara, ranch, or a zesty yogurt dip)
Instructions
Preheat your oven to 425°F (220°C).
Wash the zucchini thoroughly under cold running water, cut off the ends, slice each zucchini in half lengthwise, and then cut each half into long sticks, about 1/2 inch thick.
In one shallow bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. In another bowl, crack and whisk the eggs.
Dip each zucchini stick into the egg mixture, then roll it in the breadcrumb mixture, pressing gently to help the coating stick. Place the breaded zucchini sticks on a baking sheet lined with parchment paper.
Lightly spray the zucchini sticks with cooking spray or drizzle olive oil over the top. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
