2 large boneless, skinless chicken breasts (about 1.5 pounds)
1/4 cup olive oil, preferably extra virgin
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped for garnish
Lemon wedges for serving
Instructions
In a medium bowl, combine the olive oil, minced garlic, lemon juice, oregano, thyme, paprika, salt, and pepper. Whisk together until thoroughly mixed.
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken and seal or cover it. Refrigerate for at least 30 minutes, or up to 4 hours.
Preheat your oven to 400°F (200°C).
Remove the chicken from the marinade and place it in a baking dish. Discard any leftover marinade. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
Slice the chicken breasts against the grain and serve warm, garnished with fresh parsley and lemon wedges.
