1 large egg

Zest of 1 large lemon
1/4 cup fresh lemon juice
Powdered sugar, for dusting
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
In a large bowl, use an electric mixer to beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined and smooth.
Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.
Using a cookie scoop or a tablespoon, scoop portions of the dough and roll them into balls.
Roll each dough ball in powdered sugar until fully coated.
Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
