  1. Cook the bow tie pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water for later use if needed.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent.
  3. Add the minced garlic to the skillet, stirring for about 30 seconds until fragrant.
  4. Next, add the Italian sausage to the skillet. Use a wooden spoon to break it up into smaller pieces, ensuring even cooking. Cook for about 5-7 minutes, or until the sausage is browned and cooked through.
  5. Stir in the diced bell pepper and zucchini. Sauté for another 4-5 minutes, until the vegetables are tender.
  6. Add the can of diced tomatoes (including the juices) to the skillet, followed by the heavy cream and Italian seasoning. Stir well to combine.
  7. Allow the sauce to simmer for about 5 minutes, letting it thicken slightly. Season with salt and pepper to taste.
  8. Once the sauce is ready, add the cooked bow tie pasta to the skillet. Toss everything together until the pasta is evenly coated with the sauce.
