This classic American dish, with its rustic charm and simplicity, celebrates the sweetness of blueberries baked under a luscious, sweetened biscuit topping.
Ingredients
Scale:
4 cups fresh blueberries
1 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup milk
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the fresh blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Gently toss until coated and let it sit for 10 minutes.
Pour the blueberry mixture into a greased 9x13-inch baking dish.
In another mixing bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
Pour in the milk and vanilla extract, stirring gently just until combined.
Dollop the biscuit mixture over the blueberry filling.
Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
