Cinnamon Roll French Toast Bites

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Open the can of cinnamon roll dough and separate each roll. Cut each roll into four equal pieces.
  3. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  4. Add the chopped cinnamon roll pieces to the custard mixture, gently folding to ensure all pieces are coated evenly. Allow to sit for about 5 minutes.
  5. In a small bowl, combine the granulated sugar and ground cinnamon. Mix well and set aside.
  6. Using a slotted spoon, lift the soaked cinnamon roll pieces from the custard mixture and place them onto the prepared baking sheet, spaced evenly apart.
  7. Generously sprinkle the cinnamon sugar mixture over the top of the cinnamon roll bites.
  8. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until golden brown and p■ up.
