Layered with homemade biscuits, rich and creamy sausage gravy, and topped with gooey cheese, this dish is perfect for lazy weekend mornings or family brunches.

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup unsalted butter, cold and cubed
3/4 cup whole milk
1 pound breakfast sausage
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional for heat)
2 cups shredded cheddar cheese
2 large eggs
1/2 cup chopped green onions (optional, for garnish)
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the milk until a dough forms. Turn out onto a floured surface and knead gently. Pat into a rectangle and cut into squares.
Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown. Allow to cool slightly before cutting into quarters.
In a skillet, cook the sausage over medium heat until browned, breaking it up as it cooks. Sprinkle with flour and cook for 2 minutes.
Gradually whisk in milk and seasonings, cooking until thickened, about 5 minutes.
In a greased 9x13 inch baking dish, layer the biscuit pieces, then pour the sausage gravy over them.
Sprinkle cheese on top. In a bowl, beat the eggs and pour over the cheese.
Bake for 25-30 minutes until the eggs are set and the top is golden.
Let cool for a few minutes, garnish with green onions, cut into squares, and serve warm.
