Ingredients
Scale:
1 pound large shrimp, peeled and deveined
8 ounces linguine or spaghetti
4 cloves garlic, minced
4 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1/2 cup dry white wine (such as Sauvignon Blanc)
1/2 cup low-sodium chicken broth
2 tablespoons fresh lemon juice
1/4 cup fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
In a large pot of salted boiling water, cook the linguine or spaghetti according to the package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the pasta water, then drain the pasta and set it aside.
In a large skillet over medium-high heat, add the olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes. Sauté for about 2-3 minutes on each side until they turn pink. Remove the shrimp from the skillet and set aside.
In the same skillet, pour in the white wine and chicken broth, bringing it to a simmer over medium heat. Let it cook for about 4-5 minutes to reduce and intensify the flavor.
Add the cooked shrimp back into the skillet along with the remaining 2 tablespoons of butter, lemon juice, and chopped parsley. Stir to combine.
Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated in the sauce. Cook for an additional 1-2 minutes to heat through.
Plate the shrimp scampi immediately, garnishing with extra parsley and a squeeze of lemon juice for brightness. Serve hot.
