Caramel Apple Pie Cookie Cups

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt. In a separate large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  3. In another bowl, combine the diced apples, ground cinnamon, nutmeg, sugar, and lemon juice. Toss until the apples are evenly coated.
  4. Grease a muffin tin with cooking spray. Using a small cookie scoop or your hands, take about 1 tablespoon of the cookie dough and press it into the bottom and up the sides of each muffin cup.
  5. Spoon the apple mixture into each cookie cup, filling them generously but not overflowing.
  6. Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the edges of the cookie cups are golden brown and the apples are tender.
  7. While the cookie cups are baking, make the caramel sauce by combining brown sugar, heavy cream, and butter in a small saucepan over medium heat. Stir continuously until boiling and then boil for 2 minutes. Remove from heat and stir in vanilla extract.
  8. Once the cookie cups are baked, allow them to cool for a few minutes. Drizzle the warm caramel sauce generously over the top of each cookie cup.
  9. Serve warm or at room temperature.
