- 1 box (15.25 oz) yellow cake mix
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon (optional)
- 3 ripe bananas, mashed
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan with vegetable oil or line it with parchment paper.
- In a large mixing bowl, combine the yellow cake mix, baking soda, and ground cinnamon. Whisk together until well combined.
- In a separate bowl, mash the ripe bananas until smooth. Then add the eggs, vegetable oil, and vanilla extract. Mix until thoroughly combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined.
- Fold in the chopped walnuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let it cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
