  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with vegetable oil or line it with parchment paper.
  3. In a large mixing bowl, combine the yellow cake mix, baking soda, and ground cinnamon. Whisk together until well combined.
  4. In a separate bowl, mash the ripe bananas until smooth. Then add the eggs, vegetable oil, and vanilla extract. Mix until thoroughly combined.
  5. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined.
  6. Fold in the chopped walnuts or chocolate chips if desired.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
