There's something incredibly comforting about a warm, cheesy sandwich, and the Tuna & Sweetcorn Sandwich Melt is a delightful twist on the classic tuna sandwich. This recipe combines creamy tuna salad with sweet, juicy corn, all enveloped in melted cheese and toasted bread.
Ingredients
Scale:
1 can (about 5 oz) of tuna in water, drained
1/2 cup canned sweetcorn, drained
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste
4 slices of bread (white, whole wheat, or your choice)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
Butter for spreading on the bread
Instructions
Prepare the Tuna Salad: In a mixing bowl, combine the drained tuna, sweetcorn, mayonnaise, Dijon mustard, and lemon juice. Stir until well combined, ensuring that the sweetcorn is evenly distributed throughout the tuna. Use a fork to break up any large chunks of tuna for a smoother consistency. Season with salt and pepper to taste.
Assemble the Sandwich: Take two slices of bread and butter one side of each slice generously. On the unbuttered side, spread a generous amount of the tuna salad mixture. Feel free to pile on the tuna salad for a heartier sandwich if desired.
Add Cheese: Sprinkle half of the shredded cheese over the tuna salad. Then top with the remaining slices of bread, buttered side up.
Toast the Sandwich: Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese has melted.
Serve: Once the sandwiches are toasted to perfection, remove them from the skillet. Allow them to cool for a minute, then cut in half diagonally. Serve warm.
