A creamy cheese dip that tantalizes the taste buds and brings people together around the table.
Ingredients

2 cups of shredded cheddar cheese
1 cup of cream cheese, softened
1 cup of Velveeta cheese, cubed
1 cup of milk
1 can (10 oz) of diced tomatoes with green chilies (like Rotel)
1/2 cup of diced onions
1/2 cup of jalapeños, diced (fresh or pickled)
1 lb of ground beef (optional)
1 teaspoon of garlic powder
1 teaspoon of chili powder
Salt and pepper to taste
Chopped cilantro (optional)
Sliced jalapeños (optional)
Chopped green onions (optional)
Diced tomatoes (optional)
Instructions
If using ground beef, heat a skillet over medium heat. Add the ground beef, season with salt, pepper, garlic powder, and chili powder. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat and set aside.
In a large saucepan, combine the cream cheese, Velveeta cheese, and milk over low heat. Stir continuously until the cheeses are fully melted and smooth, about 5-7 minutes.
Gradually stir in the shredded cheddar cheese until fully melted and combined into the mixture.
Stir in the diced tomatoes with green chilies, diced onions, and jalapeños. If using ground beef, add it at this stage. Mix well.
Taste the dip and adjust the seasoning with additional salt, pepper, or chili powder if needed. Stir for another 3-5 minutes until all ingredients are well blended and heated through.
Transfer the queso to a serving bowl, and top with your choice of chopped cilantro, sliced jalapeños, diced tomatoes, or green onions. Enjoy warm with tortilla chips or fresh vegetables.
