1 cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
2 teaspoons pure vanilla extract
1 cup fresh strawberries, finely chopped
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy, about 3–4 minutes.
Incorporate the eggs, one at a time, mixing well after each addition. Add the pure vanilla extract and combine until smooth.
Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined.
Gently fold in the finely chopped fresh strawberries.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Place the baking sheets in the preheated oven and bake for 10–12 minutes, or until the edges are lightly golden.
Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to wire racks.
