2 pounds of baby potatoes or medium-sized red potatoes, washed and halved
1 cup of packed brown sugar (light or dark)
½ cup (1 stick) of unsalted butter, melted
Instructions
Start by washing the baby potatoes thoroughly under running water. Scrubbing them gently with a brush can remove any dirt stuck in crevices. If using larger potatoes, peel them if desired and cut them into even-sized pieces (about 1-2 inches).
In a medium bowl, combine the melted butter and packed brown sugar. Stir until the brown sugar is fully dissolved and the mixture is smooth.
Place the washed and halved potatoes into the slow cooker. Pour the brown sugar and butter mixture over the potatoes, ensuring they are well-coated. Gently toss the potatoes to evenly distribute the glaze.
Cover the slow cooker with its lid and set it to low heat. Cook for about 6-7 hours, or until the potatoes are tender when pierced with a fork.
If possible, stir the potatoes every couple of hours to ensure they are evenly glazed and prevent any sticking at the bottom.
Once the cooking time is complete and the potatoes are tender, remove them from the slow cooker and serve warm. Drizzle some of the remaining glaze over the top for extra flavor.
