8 ounces of your favorite pasta (e.g., penne, fusilli, or spaghetti)
1 medium zucchini, diced
1 bell pepper (any color), chopped
1 cup cherry tomatoes, halved
1 cup broccoli florets
1 medium red onion, sliced
3 cloves garlic, minced
3 tablespoons of extra virgin olive oil
Salt and black pepper, to taste
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup heavy cream
1 cup grated Parmesan cheese
1 tablespoon fresh lemon juice
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the zucchini, bell pepper, cherry tomatoes, broccoli, red onion, and minced garlic.
Drizzle the olive oil over the vegetables. Sprinkle with salt, black pepper, oregano, and basil. Toss everything together until the vegetables are well coated.
