2 cups fresh strawberries, hulled and sliced
2 cups apple juice (preferably 100% pure, no added sugars)
1 cup heavy whipping cream
1 cup sparkling water or lemon-lime soda
2-4 tablespoons honey or agave syrup (optional)

Instructions
Prepare the Strawberries: Rinse the fresh strawberries under cold water, remove the green tops, and slice them into thin pieces. Set aside a few whole strawberries for garnish if desired.
Mix the Base: In a large mixing bowl or pitcher, combine the sliced strawberries with 2 cups of apple juice. If desired, add 2-4 tablespoons of honey or agave syrup. Stir well and let sit for about 10 minutes.
