A dessert that perfectly marries the rich, creamy flavors of peanut butter with the luxurious essence of chocolate fudge.
Ingredients
Scale:
1 ¾ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons pure vanilla extract
1 cup creamy peanut butter
1 cup powdered sugar
½ cup unsweetened cocoa powder
½ cup heavy cream
1 teaspoon vanilla extract
Chocolate shavings or chips
Chopped peanuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Using an electric mixer, beat on medium speed until the batter is smooth, about 2 minutes.
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack.
In a medium bowl, combine the creamy peanut butter, powdered sugar, cocoa powder, heavy cream, and vanilla extract. Use a hand mixer to blend until smooth and creamy.
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of peanut butter fudge icing on top. Place the second layer on top and frost the top and sides of the entire cake with the remaining icing.
Sprinkle chocolate shavings or chips and chopped peanuts on top of the cake for an extra touch of indulgence.
Slice into pieces and enjoy your rich, creamy creation!
