4 medium ripe peaches, peeled, pitted, and sliced into thin wedges
1/4 cup brown sugar, packed
1 teaspoon cinnamon
1 tablespoon lemon juice
1 cup water
1 cup granulated sugar
1 teaspoon vanilla extract
Instructions
Prepare the Peaches: In a large bowl, combine the sliced peaches, brown sugar, cinnamon, and lemon juice. Gently toss to coat the peaches evenly, and set aside for about 15 minutes.
Make the Dumpling Dough: In another bowl, whisk together the flour, baking powder, salt, and granulated sugar. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
Add Milk: Pour in the milk, stirring gently until just combined. The dough should be soft and slightly sticky.
Assemble the Dumplings: Preheat your oven to 375°F (190°C). Roll out the dough to about 1/4 inch thick and cut it into squares, approximately 4 inches by 4 inches.
Fill the Dumplings: Place a spoonful of the peach filling in the center of each square. Fold the corners over the filling and pinch to seal tightly.
Prepare the Syrup: In a saucepan, combine the water, granulated sugar, and vanilla extract. Bring to a gentle boil, stirring until the sugar has dissolved completely.
Bake the Dumplings: In a greased baking dish, place the filled dumplings seam-side down. Pour the prepared syrup evenly over the dumplings. Bake for 30-35 minutes.
