Ingredients

- 1 cup chocolate graham cracker crumbs (or regular graham crackers)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered sugar
- 8 ounces mascarpone cheese, softened
- 1/2 cup heavy cream
- 1/4 cup strong brewed coffee, cooled (espresso works best)
- 1 teaspoon vanilla extract
- Additional cocoa powder for dusting
- Chocolate shavings or espresso beans (optional, for garnish)
Instructions
- Prepare the Coffee: Brew a strong cup of coffee or espresso and let it cool to room temperature.
- Beat the Cream: In a mixing bowl, pour in the heavy cream and beat until soft peaks form.
- Mix the Mascarpone: In a separate bowl, combine mascarpone cheese, powdered sugar, vanilla extract, and cooled coffee. Mix until smooth.
- Fold in the Cream: Gently fold the whipped cream into the mascarpone mixture.
- Add the Crumbs: Gradually fold in the chocolate graham cracker crumbs until evenly incorporated.
- Chill the Mixture: Cover with plastic wrap and refrigerate for at least 1 hour.
- Form the Truffles: Once chilled, use a small cookie scoop or your hands to form the mixture into truffles.
