1 cup all-purpose flour
1/2 cup water
2 large eggs
2 tablespoons unsalted butter, melted
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon baking powder
Vegetable oil for deep frying
1/2 cup granulated sugar (for cinnamon sugar coating)
1 teaspoon ground cinnamon
1/2 cup chocolate chips (optional for dipping sauce)
1 tablespoon vegetable oil (optional for thinning chocolate)
Instructions
In a medium saucepan, combine water, sugar, salt, and melted butter. Heat over medium heat until the mixture just begins to simmer. Stir occasionally until the sugar dissolves, about 2-3 minutes.
Remove the saucepan from heat and add the flour in one go. Stir vigorously with a wooden spoon until the mixture forms a dough and pulls away from the sides of the pan, about 1-2 minutes.
Let the dough cool for a minute, then add the eggs one at a time, mixing well after each addition until fully incorporated. If the dough feels too thick, add a splash of water.
Mix in the baking powder until fully combined.
In a deep frying pot, heat vegetable oil to 350°F (175°C). Use enough oil so that the beignets can float while frying.
Drop spoonfuls of the dough into the hot oil, frying for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove the beignets and place them on paper towels to drain excess oil.
In a small bowl, mix granulated sugar and ground cinnamon together. While the beignets are still warm, roll them in the cinnamon sugar mixture.
For a chocolate dipping sauce, melt chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
