  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chopped apples, brown sugar, cinnamon, lemon juice, and cornstarch. Toss until well-coated.
  3. In a large bowl, mix the flour, baking powder, salt, and granulated sugar. Add the chilled butter and mix until it resembles coarse crumbs.
  4. Pour in the milk and stir gently until just combined.
  5. Turn the dough out onto a lightly floured surface and knead a few times until it comes together. Roll out to 1/2 inch thickness.
  6. Use a biscuit cutter or glass to cut out circles. Gather scraps, re-roll, and cut more circles.
  7. Place half of the dough circles on the baking sheet. Spoon a generous amount of the filling onto each circle. Top with remaining circles, pressing edges to seal.
  8. Brush the tops with the beaten egg and sprinkle with granulated sugar.
  9. Bake for 12-15 minutes or until golden brown.
  10. Allow to cool on a wire rack before serving warm.
