1 pound ground beef (preferably 80/20)
1/2 cup breadcrumbs (preferably Italian)
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons olive oil
1 small onion, finely chopped
2 cups beef broth
1 cup tomato sauce
1 tablespoon Worcestershire sauce
1 teaspoon sugar
Chopped parsley for garnish
Instructions
In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, oregano, and basil. Mix well until combined.
Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the meatballs in batches and cook for about 4-5 minutes on each side.
In the same skillet, add the chopped onion and sauté until translucent. Then pour in the beef broth, tomato sauce, Worcestershire sauce, and sugar. Stir well and return the meatballs.
Bring the gravy to a gentle simmer over low heat, cover, and simmer for 20-25 minutes.
Check the seasoning and adjust with salt and pepper if necessary. Garnish with chopped parsley before serving.
