1 teaspoon baking powder
1 teaspoon salt
1 ½ cups warm water (adjust as needed)
2 tablespoons vegetable oil or melted lard
1 cup shredded cheese (such as Oaxaca or mozzarella)
1 cup cooked and seasoned meat (such as shredded chicken, beef, or pork)
1 cup sautéed vegetables (like bell peppers, onions, and zucchini)
1 cup refried beans (optional)
Vegetable oil (for deep frying, about 2 cups)
Instructions
In a large mixing bowl, combine the masa harina, baking powder, and salt. Stir well to ensure even distribution of dry ingredients.
Gradually pour in the warm water and vegetable oil (or lard). Mix with your hands or a spoon until a soft dough forms.
Cover the bowl with a damp cloth and let the dough rest for about 30 minutes.
Prepare your desired fillings, ensuring they are cooked and seasoned to your liking.
Take a small ball of masa (about the size of a golf ball) and flatten it into a disc in your palm. Place a spoonful of your chosen filling in the center, then fold the disc over to encase the filling and pinch the edges tightly to seal.
In a large pot or deep skillet, heat the vegetable oil over medium-high heat. Maintain the temperature around 350°F (175°C).
Carefully slide your masa bombas into the hot oil, a few at a time. Fry for about 3-4 minutes on each side or until golden brown and crispy.
Remove the masa bombas from the oil and place them on a plate lined with paper towels to absorb excess oil. Serve hot.
