Ingredients
Scale:
2 cod fillets (6 ounces each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 teaspoon lemon zest
1 teaspoon dried oregano
Salt and pepper to taste
1 cup cherry tomatoes, halved (optional)
1 medium zucchini, sliced (optional)
1 bell pepper, sliced (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, lemon zest, dried oregano, salt, and pepper.
Marinate the Cod: Place the cod fillets in a baking dish. Pour the marinade over the fillets, ensuring they are coated evenly. Allow them to marinate for at least 15 minutes.
Prepare the Vegetables: If using, toss the cherry tomatoes, zucchini, and bell pepper with a bit of olive oil, salt, and pepper.
Bake the Cod: Arrange the marinated cod in the baking dish. If using vegetables, scatter them around the fish. Bake for about 15-20 minutes.
Serve: Once baked, remove the dish from the oven. Garnish the cod with fresh parsley and serve immediately with the roasted vegetables.
