3 cups granulated sugar
1 cup unsweetened cocoa powder
1/4 teaspoon salt
1 cup heavy cream
1/2 cup unsalted butter (cut into cubes)
1 teaspoon vanilla extract
1 cup chopped nuts (walnuts or pecans, optional)
Sea salt for sprinkling (optional)
Instructions
Line an 8x8-inch baking pan with parchment paper.
In a large bowl, whisk together the granulated sugar, cocoa powder, and salt until well combined.
In a medium saucepan, combine the heavy cream and unsalted butter. Heat over medium heat until the butter is melted.
Pour the warm cream mixture into the bowl with the dry ingredients and stir vigorously until smooth.
Stir in the vanilla extract until evenly distributed.
Return the saucepan to low heat and cook the mixture for about 5-7 minutes, stirring constantly until it reaches soft-ball stage (235°F to 240°F).
Remove from heat and let it cool undisturbed for about 10 minutes.
Using an electric mixer or whisk, beat the fudge mixture on medium speed for 5-10 minutes until thick and glossy.
Pour the fudge into the prepared baking pan and spread evenly.
If desired, sprinkle chopped nuts and a pinch of sea salt on top and lightly press them into the fudge.
