Ingredients
Scale:
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1 cup graham cracker crumbs
4 tbsp unsalted butter, melted
1 ripe banana, sliced
1/2 cup chocolate syrup
1/2 cup whipped cream (for serving)
Maraschino cherries (optional, for garnish)
Instructions
Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand. Press this mixture firmly into the bottom of a lined muffin tin or silicone mold to form the crust. Chill in the refrigerator while preparing the filling.
Create the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.
Whip the cream: In another bowl, whip the heavy cream until stiff peaks form.
Combine mixtures: Gently fold the whipped cream into the cream cheese mixture using a spatula.
Assemble the bites: Spoon or pipe the cheesecake filling over the chilled crust in each mold, filling them about 3/4 full. Place a banana slice on top of each cheesecake filling.
Chill: Cover the muffin tin with plastic wrap and refrigerate for at least 4 hours or until set.
Serve: Once set, remove the cheesecake bites from the molds. Drizzle chocolate syrup on top and add a dollop of whipped cream.
