1 lb (450g) ground beef
2 cups mixed vegetables (carrots, peas, corn)
1 medium onion, chopped
3 cloves garlic, minced
1 cup diced tomatoes (canned or fresh)
2 cups cooked rice (white or brown)
1 cup shredded cheese (cheddar or your favorite blend)
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
1 cup breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.
Stir in the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
Mix in the diced tomatoes, oregano, paprika, salt, and pepper. Let it simmer for about 5 minutes.
Add the cooked rice to the skillet, mixing thoroughly to combine all ingredients. Remove from heat and taste for seasoning.
Transfer the mixture to a greased 9x13 inch (23x33 cm) baking dish and spread evenly.
Sprinkle shredded cheese over the top of the mixture.
In a small bowl, combine breadcrumbs with melted butter and sprinkle over the cheese layer.
Bake for about 25-30 minutes or until the topping is golden brown and crispy.
