This recipe not only highlights the deliciousness of lean proteins but also embraces the vibrant flavors of summer. The combination of grilled chicken, creamy avocado, and zesty salsa creates a gourmet burger experience that is both satisfying and healthy.
Ingredients
Scale:
1 pound boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
Salt and pepper to taste
2 ripe avocados, diced
1 medium tomato, diced
1/4 red onion, finely chopped
1 jalapeño, seeded and minced (optional for heat)
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
4 whole wheat burger buns
Lettuce leaves (optional)
Sliced cheese (optional, such as pepper jack or cheddar)
Instructions
In a mixing bowl, combine the olive oil, lime juice, chili powder, garlic powder, cumin, salt, and pepper. Whisk until well mixed.
Add the chicken breasts to the marinade, ensuring they are well coated. Cover with plastic wrap and let marinate for at least 30 minutes in the refrigerator.
In a separate bowl, combine diced avocados, diced tomato, chopped red onion, minced jalapeño (if using), cilantro, lime juice, and salt. Gently toss to combine and set aside.
Preheat your grill to medium-high heat (about 375°F to 400°F).
Once the grill is ready, place the marinated chicken breasts on the grill. Cook for 6-7 minutes on one side, then flip and cook for an additional 5-6 minutes or until the internal temperature reaches 165°F.
While the chicken is resting, place the burger buns on the grill for 1-2 minutes until lightly toasted.
On the bottom half of each toasted bun, place a lettuce leaf, followed by the grilled chicken. Top with avocado salsa, and if desired, add a slice of cheese.
Serve immediately while warm, with a side of sweet potato fries or a fresh green salad.
