1 cup milk
2 large eggs

Zest of 1 large orange
Juice of 1 large orange (about ⅓ cup)
Cinnamon sugar topping (1 tablespoon sugar mixed with ½ teaspoon cinnamon)
Maple syrup or homemade pancake syrup for serving
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon until well combined.
In another bowl, beat the eggs until they are frothy. Then, add the milk, melted butter, vanilla extract, orange zest, and orange juice. Mix until smooth.
Pour the wet ingredients into the dry ingredients, gently folding them together until just combined.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
