  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, nutmeg, salt, and pepper. Mix well.
  3. On a floured surface, gently roll out one sheet of the thawed puff pastry to a 1/8-inch thickness. Cut into squares or rectangles, approximately 4x4 inches.
  4. Place a generous spoonful of the filling in the center of each pastry square.
  5. Fold the pastry over the filling to create a triangle or rectangle. Press the edges together firmly to seal.
  6. In a small bowl, beat the egg with a fork. Brush the tops of the pastries with the egg wash.
