2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon nutmeg
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, nutmeg, salt, and pepper. Mix well.
On a floured surface, gently roll out one sheet of the thawed puff pastry to a 1/8-inch thickness. Cut into squares or rectangles, approximately 4x4 inches.
Place a generous spoonful of the filling in the center of each pastry square.
Fold the pastry over the filling to create a triangle or rectangle. Press the edges together firmly to seal.
In a small bowl, beat the egg with a fork. Brush the tops of the pastries with the egg wash.
Place the filled pastries on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes or until they are p■ and golden brown.
Once baked, remove the pastries from the oven and allow them to cool for a few minutes. Serve warm.
