Golden crisp potato bread rolls are a delightful addition to any meal, melding the comforting taste of potatoes with the fluffiness of freshly baked bread.

3 cups all-purpose flour
1 packet (2 1/4 tsp) instant yeast
1 tsp salt
2 tbsp sugar
1 cup mashed potatoes (preferably warm and creamy)
1/2 cup milk (warm)
1/4 cup unsalted butter (melted)
1 large egg (room temperature)
1 tbsp melted butter (for brushing)
Sea salt (for sprinkling)
Instructions
In a large mixing bowl, combine the dry ingredients: flour, instant yeast, salt, and sugar. Whisk them together thoroughly until well mixed.
Create a well in the center of the dry mixture and add the warm mashed potatoes, warm milk, melted butter, and egg. Mix with a wooden spoon until combined.
Transfer the dough onto a lightly floured surface. Knead for about 5-7 minutes, or until the dough is smooth and elastic.
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
After the dough has risen, punch it down gently to release excess air. Divide the dough into 12 equal pieces and shape each piece into a ball.
Place the shaped rolls on a greased baking tray, cover them with a damp cloth and let them rise for another 30-40 minutes until p■ up.
Preheat the oven to 375°F (190°C). Once the rolls have risen, bake them for 20-25 minutes or until they turn golden brown.
Remove the rolls from the oven and immediately brush the tops with melted butter and sprinkle with sea salt if desired.
Allow the rolls to cool on a wire rack for about 10 minutes before serving.
