- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 3 cups rolled oats
- ½ cup (1 stick) unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the butter-sugar mixture and stir until just combined.
- Fold in the rolled oats until evenly distributed.
- Transfer the cookie dough into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden brown. Allow to cool for at least 15 minutes in the pan.
- For the frosting, beat the softened butter until creamy, then gradually add powdered sugar, milk, and vanilla extract until smooth.
- Spread the frosting evenly over the cooled bars. Optionally sprinkle with cinnamon or chopped nuts.
- Cut into squares or rectangles and serve.
