  1. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, French onion soup, Worcestershire sauce, salt, and black pepper. Use your hands to mix until just combined; avoid overmixing to keep the meatloaf tender.
  2. Form the meat mixture into a loaf shape, about 8 inches long and 4 inches wide, and place it gently into the bottom of your slow cooker.
  3. Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours. The meatloaf is done when it reaches an internal temperature of 160°F (70°C).
  4. During the last 30 minutes of cooking, sprinkle the shredded cheese on top of the meatloaf. Replace the lid and allow the cheese to melt.
  5. Once cooked, carefully remove the meatloaf from the slow cooker using a spatula or a large spoon. Let it rest for about 10 minutes before slicing.
  6. Serve warm, garnished with chopped fresh parsley if desired.
