Ingredients
Scale:
- 1 pound large sea scallops, preferably dry-packed
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon freshly squeezed lemon juice
- Zest of 1 lemon
Instructions
- Rinse the scallops under cold water and pat them dry with paper towels.
- Lightly season both sides of the scallops with salt and black pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Carefully place the scallops in the skillet and cook for about 2-3 minutes without moving them.
- Using tongs, gently flip each scallop and add the butter to the pan. Cook for an additional 2-3 minutes.
- Remove the scallops from the skillet and set aside. In the same skillet, reduce the heat to medium, add the minced garlic, and sauté until fragrant.
- Add the parsley, lemon juice, and lemon zest to the skillet. Stir to combine and season with salt and pepper to taste.
- Plate the scallops and drizzle the garlic butter sauce over them. Serve immediately.
