2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 cup buttermilk (or substitute with regular milk and a splash of vinegar)
1/4 cup dark rum
1 teaspoon vanilla extract
1/4 cup dark rum (for soaking)
Powdered sugar for dusting
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan thoroughly.
In a medium bowl, whisk together the flour, baking powder, salt, and baking soda until well combined.
In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, combine the buttermilk, dark rum, and vanilla extract. Gradually add this mixture to the butter and sugar mixture, mixing until just combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until no flour streaks remain.
Pour the batter into the prepared bundt pan and smooth the top with a spatula.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a wire rack to cool completely.
Poke holes in the top using a skewer and brush the remaining 1/4 cup of dark rum over the cake.
Dust with powdered sugar before serving, if desired. Slice and enjoy.
