1 pound ground beef
1 small onion, chopped
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies
1 packet taco seasoning
1 cup sour cream
2 cups shredded cheese (cheddar or Mexican blend)
6 cups Doritos (Nacho Cheese flavor), crushed
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup sliced black olives (optional)
1/2 cup chopped green onions
Additional cheese for topping
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef and chopped onion. Cook, stirring occasionally, until the beef is browned and the onion is translucent, about 5-7 minutes.
Carefully drain any excess fat from the skillet.
Stir in the black beans, corn, and diced tomatoes with green chilies. Mix well.
Sprinkle in the taco seasoning. Stir to combine and let it simmer for 2-3 minutes.
Remove the skillet from heat and stir in the sour cream.
In a large casserole dish, spread half of the crushed Doritos at the bottom. Layer half of the beef mixture on top and sprinkle with one cup of shredded cheese. Repeat this process with the remaining Doritos, beef mixture, and top with a generous layer of cheese.
Cover the casserole with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden.
