This colorful salad seamlessly combines the satisfying texture of crunchy Doritos with the fresh ingredients of a classic taco salad, making it a perfect dish for any gathering.
Ingredients
Scale:
1 pound ground beef (or substitute with turkey or a plant-based option)
1 tablespoon olive oil
1 packet taco seasoning mix
1 head of romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup corn, canned or frozen
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
1 medium avocado, diced
1 cup Doritos, crushed
½ cup sour cream (or Greek yogurt)
½ cup salsa
1 tablespoon lime juice
1 teaspoon cumin (optional)
Instructions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 6-8 minutes, breaking it apart with a spoon for even cooking.
Stir in the taco seasoning mix according to the package instructions. If the mix requires water, add it in and let it simmer for 2-3 minutes until thickened.
In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, black beans, and diced avocado. Toss gently to mix the ingredients together.
In a separate small bowl, whisk together the sour cream, salsa, lime juice, and cumin (if using) until smooth. Adjust seasoning to taste.
Pour the ground beef mixture over the salad base and drizzle with the dressing. Toss gently to combine all ingredients.
Just before serving, sprinkle the crushed Doritos on top for that signature crunch.
