4 large potatoes (approximately 2 pounds), peeled and cubed
1 teaspoon salt, adjust to taste
½ teaspoon black pepper, freshly ground
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon fresh herbs (parsley or chives), finely chopped
1 cup shredded cheddar cheese
½ cup cream cheese, softened
½ teaspoon paprika, sweet or smoked
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs (preferably panko)
Oil for frying (vegetable or canola oil)
Instructions
In a large pot, combine the cubed potatoes with enough water to cover them completely. Add salt and bring to a boil over high heat. Cook for about 15-20 minutes until fork-tender.
Drain the potatoes and return them to the pot to allow any excess moisture to evaporate.
Mash the potatoes until smooth, ensuring there are no lumps.
In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, paprika, salt, and pepper. Mix until smooth.
Take a small handful of mashed potatoes and flatten it to create a disc. Place a tablespoon of cheese filling in the center and fold the potato over to enclose it, forming a ball.
Set up a breading station with flour, beaten eggs, and breadcrumbs.
Roll each potato ball in flour, dip in eggs, and coat with breadcrumbs.
Heat about an inch of oil in a skillet over medium heat until it reaches 350°F (175°C).
Fry the bites for 3-4 minutes on each side until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
