  1. In a large pot, combine the cubed potatoes with enough water to cover them completely. Add salt and bring to a boil over high heat. Cook for about 15-20 minutes until fork-tender.
  2. Drain the potatoes and return them to the pot to allow any excess moisture to evaporate.
  3. Mash the potatoes until smooth, ensuring there are no lumps.
  4. In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, paprika, salt, and pepper. Mix until smooth.
  5. Take a small handful of mashed potatoes and flatten it to create a disc. Place a tablespoon of cheese filling in the center and fold the potato over to enclose it, forming a ball.
  6. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  7. Roll each potato ball in flour, dip in eggs, and coat with breadcrumbs.
  8. Heat about an inch of oil in a skillet over medium heat until it reaches 350°F (175°C).
  9. Fry the bites for 3-4 minutes on each side until golden brown and crispy.
  10. Transfer to a paper towel-lined plate to drain excess oil.
