  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
  3. Slice each potato in half lengthwise, then cut each half into 3 wedges.
  4. In a large mixing bowl, combine the potato wedges with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika. Toss until evenly coated.
  5. Sprinkle the grated Parmesan cheese over the seasoned potato wedges and toss again.
  6. Line a baking sheet with parchment paper and spread the potato wedges in a single layer.
  7. Bake for 30-35 minutes, flipping halfway through until golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley and additional Parmesan cheese if desired.
