Ingredients
Scale:
1 lb (450 g) gnocchi (store-bought or homemade)
2 cups fresh basil leaves, packed tightly
1/2 cup pine nuts (or walnuts)
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 cup extra virgin olive oil
Salt and pepper to taste
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
Fresh basil leaves for garnish
Instructions
In a food processor, combine the fresh basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until finely chopped.
With the processor running, slowly drizzle in the olive oil until the pesto is smooth and creamy, and season with salt and pepper to taste.
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the top, about 2-3 minutes. Drain and set aside.
In a large skillet over medium heat, add the heavy cream. Stir constantly and allow it to simmer gently for about 5 minutes until thickened slightly.
Reduce the heat to low. Stir in the prepared pesto and chopped sun-dried tomatoes, mixing until well combined and heated through.
Gently fold the cooked gnocchi into the creamy pesto sauce, ensuring each piece is coated evenly. Cook for an additional 2-3 minutes to combine flavors.
Remove from heat and serve immediately, garnished with fresh basil leaves and additional grated Parmesan if desired.
