  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, thyme, and oregano on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are soft.
  4. Push the mushrooms to the side of the skillet, and add the seasoned chicken breasts. Sear the chicken for about 3-4 minutes on each side until golden brown.
  5. Pour in the chicken broth and heavy cream, scraping the bottom of the skillet to deglaze. Stir everything together and bring to a simmer.
  6. Sprinkle the mozzarella and Parmesan cheese evenly over the top of the chicken and sauce mixture.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
  8. Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
