1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
1/4 cup almond flour or coconut flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika (smoked or regular)
Salt and pepper to taste
Optional: fresh herbs (like oregano or thyme)
Instructions
Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C).
In a mixing bowl, combine 1 cup of cottage cheese and 1/2 cup of your chosen shredded cheese. Stir until well blended.
Mix in 1/4 cup of almond flour, 1/2 teaspoon each of garlic powder, onion powder, and paprika. Season with salt and pepper to taste. If using fresh herbs, chop and fold them into the mixture.
Line a baking sheet with parchment paper or lightly grease the air fryer basket. Scoop tablespoon-sized portions of the mixture onto the prepared surface, flattening each mound into a thin circle approximately 1/4 inch thick.
