  1. Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. In a mixing bowl, combine 1 cup of cottage cheese and 1/2 cup of your chosen shredded cheese. Stir until well blended.
  3. Mix in 1/4 cup of almond flour, 1/2 teaspoon each of garlic powder, onion powder, and paprika. Season with salt and pepper to taste. If using fresh herbs, chop and fold them into the mixture.
  4. Line a baking sheet with parchment paper or lightly grease the air fryer basket. Scoop tablespoon-sized portions of the mixture onto the prepared surface, flattening each mound into a thin circle approximately 1/4 inch thick.
  5. If baking, place the chips in the oven and bake for 15-20 minutes, or until golden brown and crispy. If using an air fryer, cook for about 10-12 minutes, checking halfway through.
