Ingredients
Scale:
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup whole milk
1 teaspoon vanilla extract
1/4 cup granulated sugar (for topping)
2 teaspoons ground cinnamon
Instructions
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
Add the cold, cubed butter to the flour mixture. Work the butter into the dry ingredients until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the milk and vanilla extract, and pour this into the flour-butter mixture. Stir gently until just combined.
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
Roll the dough to about 1-inch thickness and cut it into bite-sized squares or rounds.
In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
Place the biscuit bites on the prepared baking sheet. Brush the tops lightly with melted butter and sprinkle with the cinnamon sugar mixture.
Bake in the preheated oven for about 12-15 minutes, or until the tops are golden brown.
Once baked, remove from the oven and let them cool for a few minutes on a wire rack.
