Traditional cheesesteaks boast a perfect blend of thinly sliced beef, sautéed onions, and gooey melted cheese, all piled high on a soft hoagie roll.

1 ½ pounds ribeye steak, thinly sliced
4 hoagie rolls, preferably Amoroso's or a similar soft, crusty bread
1 tablespoon olive oil
Salt and pepper, to taste
1 large yellow onion, thinly sliced
1 medium green bell pepper, thinly sliced
1 medium red bell pepper, thinly sliced
2 tablespoons butter
8 ounces provolone cheese, sliced or shredded
8 ounces Cheez Whiz or a homemade cheese sauce
Instructions
Prepare the Ingredients: Start by slicing the ribeye steak as thinly as possible. If your butcher can do this for you, that's ideal. If using a whole steak, freeze it for about 30 minutes to make slicing easier. With a sharp knife, slice against the grain to ensure tenderness.
Sauté the Vegetables: In a large skillet over medium heat, melt the butter. Add the sliced onions and bell peppers. Sauté until they are soft and caramelized, about 10-12 minutes. Season with salt and pepper.
Cook the Steak: In the same skillet, add olive oil and turn the heat to high. Add the sliced ribeye to the hot skillet in a single layer. Cook for about 3-4 minutes, stirring occasionally, until the meat is browned but not overcooked. Season with salt and pepper during cooking.
Combine Ingredients: Once the steak is cooked to your liking, return the sautéed onions and peppers to the skillet with the steak. Mix well to combine and heat through, about 1-2 minutes.
Add the Cheese: Reduce the heat to low. Lay the provolone cheese over the steak and vegetable mixture. If using Cheez Whiz, pour it over the mixture. Cover the skillet with a lid for 2-3 minutes, or until the cheese is melted and gooey.
Assemble the Sandwiches: While the cheese is melting, lightly toast the hoagie rolls in the oven or on a skillet. Once toasted, fill each roll generously with the cheesy steak mixture.
