Ingredients
Scale:
8 ounces of penne pasta
Salt, for boiling water
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced
1 packet of ranch seasoning mix (about 1 ounce)
1 cup chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup crumbled bacon (optional)
1/4 cup chopped fresh parsley for garnish
Instructions
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, typically about 8-10 minutes. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.
Sprinkle the ranch seasoning mix over the cooked chicken. Stir well to coat the chicken evenly with the seasoning.
Pour in the chicken broth and heavy cream. Stir to combine and bring the mixture to a simmer. Allow it to cook for about 3-5 minutes until the sauce thickens slightly.
Gradually add the shredded cheddar cheese to the sauce, stirring continuously until the cheese has melted and the sauce is creamy.
Add the cooked penne pasta to the skillet, tossing to coat the pasta in the creamy ranch sauce. Cook for an additional 2-3 minutes.
Remove from heat and serve immediately. Top with crumbled bacon and chopped fresh parsley.
