Cauliflower cheese is a beloved comfort food that pairs the mild, nutty flavor of cauliflower with a rich cheese sauce, creating a satisfying meal or side dish that is both indulgent and wholesome.

1 large head of cauliflower, cut into florets (about 4 cups)
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
3 cups whole milk
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
1 teaspoon mustard powder
Salt and pepper to taste
A pinch of cayenne pepper (optional)
1 cup breadcrumbs (panko or regular)
2 tablespoons olive oil or melted butter
Extra cheese for sprinkling on top (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until just tender. Drain and set aside.
In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2 minutes to create a roux.
Gradually add the milk to the roux, whisking constantly to avoid lumps. Keep whisking until the sauce thickens, about 5-7 minutes.
Remove the sauce from heat and stir in the shredded cheddar and grated Parmesan until completely melted and smooth. Add mustard powder, salt, pepper, and cayenne pepper (if using).
Place the cooked cauliflower in a baking dish. Pour the cheese sauce over the cauliflower and mix gently.
In a small bowl, mix the breadcrumbs with olive oil (or melted butter) until moistened. Sprinkle this mixture over the cauliflower cheese.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
Remove from the oven and let it cool for a few minutes before serving.
