1 teaspoon chili powder
1 cup ketchup
1/4 cup apple cider vinegar
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon hot sauce (adjust to taste)
Instructions
Prepare the Marinade: In a large mixing bowl, whisk together the apple cider vinegar, olive oil, Worcestershire sauce, Dijon mustard, minced garlic, smoked paprika, and salt. Ensure all ingredients are well combined.
Marinate the Ribs: Place the beef back ribs in a large resealable plastic bag or a shallow dish, then pour the marinade over them. Ensure that the ribs are evenly coated, then seal the bag and refrigerate for at least 4 hours, preferably overnight.
Prepare the Rub: In a separate bowl, combine the brown sugar, black pepper, onion powder, garlic powder, cayenne pepper, and chili powder. Mix well to create a savory rib rub.
Preheat Your Grill or Smoker: Prepare your grill or smoker for indirect cooking, aiming for a temperature of 225°F (107°C).
Season the Ribs: Remove the ribs from the marinade and pat them dry with paper towels. Generously apply the savory rib rub on both sides of the ribs.
Cook the Ribs: Place the ribs on the cooler side of the grill or in the smoker and cook for 2.5 to 3 hours, maintaining the temperature around 225°F (107°C).
Apply BBQ Sauce: After 2.5 to 3 hours, brush the sweet and spicy BBQ sauce liberally over the ribs, then move them to the hotter side of the grill for about 5-10 minutes until the sauce caramelizes.
Rest the Ribs: Once caramelized, remove the ribs from the grill and let them rest for 10-15 minutes.
Slice and Serve: Cut the ribs between the bones and serve with additional BBQ sauce on the side.
