Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If you don’t have leftover baked potatoes, bake the potatoes until fork-tender, which typically takes about 45-60 minutes. Allow them to cool slightly, then peel them.
  3. In a large bowl, mash the baked potatoes until smooth. Add the shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.
  4. Spread a layer of the potato mixture onto a baking sheet lined with parchment paper to create an even layer about 1/4 inch thick.
  5. Bake the potato layer in the preheated oven for about 20-25 minutes, or until the edges are golden brown and the top is firm to the touch.
  6. Remove the potato crust from the oven and let it cool for a few minutes. Cut the crust into rectangles. Place a slice of deli meat on each rectangle, and sprinkle fresh herbs if desired.
  7. Starting from one end, roll each rectangle tightly into a roll-up. Place seam-side down on the baking sheet. Brush the tops with olive oil if desired.
  8. Bake again for an additional 15-20 minutes, or until the roll-ups are heated through and golden brown.
  9. Allow the roll-ups to cool slightly before serving.
