4 medium baked potatoes, peeled and cubed
2 cups cooked chicken, shredded or diced
2 cups fresh broccoli florets
1 cup shredded cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup crispy fried onions (optional)
Additional shredded cheddar cheese (for extra cheesiness)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cubed baked potatoes, cooked chicken, broccoli florets, cheddar cheese, sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed and coated.
Transfer the mixture to a greased 9x13-inch baking dish. Spread it evenly and press it down gently.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and sprinkle additional shredded cheddar cheese on top along with crispy fried onions if desired.
Return the casserole to the oven and bake uncovered for an additional 15-20 minutes.
